Weekly Dinner Plan: July 23–29, 2018

My son (aka Mr. Picky) has been away for four weeks, and I’m picking him up this week. I can’t wait to see him — I miss him and even all his pickiness. I won’t be following this dinner planner while I’m traveling, but I’ve started planning the week I’ll spend with my parents, my sisters, and their families. I’m glad I’ve been taking notes on recent visits so I remember which meals were a hit and which ones don’t need repeating. I’m excited to share this dinner planner for the week:

Meatless Monday: Charlie Bird’s Farro Salad

Tuesday: Chipotle Shrimp Tacos with Pineapple Slaw (from my book)

Wednesday: Roasted Cauliflower with Almond Herb Sauce over your pasta of choice, served with a simple tomato salad

Thursday: Asian Turkey Lettuce Cups, with roasted sweet potato wedges if you want something extra

Friday: California Greek Salad served with grilled chicken — use the grilled chicken method noted (make extra for Saturday lunch)

Saturday Lunch: Middle Eastern Rice Salad using leftover grilled chicken

Sunday: Slow-roasted salmon with mango-cucumber salsa, served alongside roasted broccoli with lemon and a light breadcrumb-Parmesan finish

To make the week go smoothly, here are a few things you can prepare in advance if you have time:

Sunday prep

– Cook the farro for Monday
– Make all dressings
– Prepare sauces
– Dice the pineapple for tacos
– Mix the taco spice blend
– Slice the cabbage for slaw

Wednesday prep

– Cook the rice for salads
– Wash and dry the lettuce for Thursday’s cups
