Ingredients

  • 2 tablespoon extra virgin olive oil
  • 1 15-oz. can black beans, drained and rinsed
  • ½ medium red bell pepper, finely diced
  • 2 tablespoon water
  • 1 tsp. ground cumin
  • ½ tsp. chili powder
  • 1 tsp. smoked paprika
  • ¼ tsp. cayenne pepper
  • ¼ tsp. dried oregano
  • Salt and black pepper, to taste
Guacamole Ingredients
  • 2 large ripe avocados, pitted
  • 1 medium tomato, seeded and diced
  • 3 Tbsp. fresh lime juice
  • 2 Tbsp. fresh cilantro, minced
  • ½ medium jalapeño, finely diced
  • Salt and black pepper, to taste

Method

  1. Heat olive oil in a skillet over medium heat. Add black beans, water, cumin, chili powder, smoked paprika, cayenne, and oregano. Season with salt and black pepper and stir to combine.
  2. Cook, stirring occasionally, until the beans are warmed through and the spices are fragrant, about 4–5 minutes. Remove from heat and set aside.
To Make Guacamole
  1. While the beans cook, mash the avocados in a small nonreactive bowl. Add diced tomato, lime juice, cilantro, and jalapeño. Season with salt and black pepper and stir to combine. Set aside.
  2. Transfer warm beans to a serving bowl and fold in the diced bell pepper. Serve immediately with large lettuce leaves, corn or flour tortillas, or tostadas. Top with guacamole and any additional salsa you like.
