- Pat the fish dry. Dry fish helps the seasoning stick and promotes even cooking.
- Season evenly. Sprinkle an even layer over one side and gently press the rub to adhere, then flip and repeat on the other side.

This seasoning pairs well with most white fish commonly used in tacos. Favorites include:
- Mahi mahi: Dense, slightly sweet, and holds up well on the grill.
- Tilapia: Mild, slightly sweet, and firm.
- Cod: Delicate, flaky texture with a mild flavor.
Cook the seasoned fish by baking, pan-searing, or grilling:
- Bake: Place seasoned fish on a parchment-lined sheet and bake at 400°F for about 10 minutes, until cooked through.
- Pan-sear: Heat a skillet over medium with a small amount of oil and cook 3–4 minutes per side, depending on thickness.

Large Batch & Storage Instructions
This recipe yields enough seasoning for about 1 pound of fish. A good guideline is 1/2 to 1 teaspoon per side of a fillet.
- Large batch: Multiply the recipe by five (or more) and store in a jar. When using a large batch, measure about 2 tablespoons of seasoning per 1 pound of fish.
- Storage: Keep the spice mix in a sealed jar in a cool, dark pantry. It will stay fresh for up to one year.
