Of course a picnic needs something to sip. For this outing I made Blackberry Shrub Lemonade. Shrubs — fruit preserved with sugar and vinegar — have made a comeback, and they’re a great way to use slightly overripe fruit. In my kitchen that often means imperfect blackberries, which work perfectly here.
Think of a shrub as an amplified syrup: fruit is macerated in sugar, then brightened with a bit of vinegar, producing a layered, tangy-sweet syrup. Mix a splash of that shrub with club soda or sparkling lemonade for an instant, refreshing beverage. The kids gave this sparkling lemonade version two enthusiastic thumbs up.

I didn’t serve alcohol at the park, of course, but when I got home I tried a grown-up version with a generous splash of rum. It turned the drink into something more rounded and a little decadent — the kind of cocktail you’d sip on a porch at sunset. Whether you omit the rum for a family-friendly drink or add it for yourself, the shrub shines.

Ingredients
For the Blackberry Shrub Syrup:
- 2 cups blackberries
- 1 cup granulated sugar
- 2 tablespoons white balsamic vinegar
For the Blackberry Shrub Lemonade:
- 1 oz blackberry shrub syrup
- 2 oz rum omit for a kid-friendly lemonade
- Sparkling lemonade
Instructions
Make the Blackberry Shrub Syrup:
- In a medium bowl combine the blackberries and sugar. Mash with a spoon, muddler, or potato masher and let sit at room temperature for about 2 hours, or cover and refrigerate overnight. Press the blackberry mixture through a fine sieve into a bowl, pressing to extract as much juice as possible. Stir in the white balsamic vinegar, pour the syrup into a sterilized jar, and store in the refrigerator for up to a month.
Make the Blackberry Shrub Lemonade:
- Pour 1 oz blackberry shrub syrup and 2 oz rum into a glass (omit the rum for a kid-friendly drink). Top with sparkling lemonade and ice. Serve and enjoy.
