Ingredients for Shrimp Couscous Salad:

  • 1 cup couscous
  • 1 cup water
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1 (12 oz) bag cooked shrimp
  • 1 roma tomato, diced
  • 1/2 cup feta cheese, crumbled

Vinaigrette Dressing:

  • 1/3 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, crushed
  • 1/2 lemon, juiced
  • Salt and pepper to taste

How to make Couscous Salad with Shrimp and Feta

1. Bring 1 cup of water to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork and allow to cool.

2. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, crushed garlic, lemon juice, and salt and pepper to taste. Set the vinaigrette aside.

3. In a large bowl, combine the cooled couscous, diced red and yellow bell peppers, diced roma tomato, cooked shrimp, and crumbled feta. Pour the vinaigrette over the salad and toss gently to coat.

4. Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld. Serve cold or at cool room temperature.
