Whole Wheat Chocolate Chip Muffins with No Sugar

Because this recipe uses no refined sugar, honey or maple syrup provides the sweetness. Either works well; in muffins they produce very similar results.

Note that the recipe calls for a modest amount of chocolate chips. The batter yields nine muffins, so the chips are distributed to give about two chips per bite—enough chocolate for balance without overwhelming the muffin. If you prefer a more chocolate-forward muffin, you can increase the amount of chips to taste.

This recipe intentionally yields nine muffins rather than twelve so you get jumbo, bakery-style muffins with tall, appealing tops. Dividing the same batter into 12 cups will produce smaller muffins with less dramatic domes.

Ingredients

 

  • 1/2 cup 2% Greek yogurt, plain or vanilla
  • 2/3 cup honey or maple syrup
  • 1/3 cup vegetable oil
  • 1/3 cup unsweetened nondairy milk
  • 1 egg
  • 1/2 tablespoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup semisweet chocolate chips (mini or regular sized)

Instructions

 

  • Preheat the oven to 400°F. Line a muffin pan with liners or spray with nonstick cooking spray and set aside.
  • In a large bowl, combine the Greek yogurt, honey or maple syrup, oil, and milk.
  • Beat in the egg and vanilla extract until combined.
  • In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
  • Add the dry ingredients to the wet ingredients and mix until just incorporated. Fold in the chocolate chips—do not overmix.
  • Scoop the batter evenly into the nine muffin cups.
  • Bake for 17–18 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
