I wish every night could be taco night.

I enjoy tacos in many forms, from seafood tacos to scrambled tofu breakfast tacos.

Our go-to for an easy taco dinner is lentil tacos, but tofu makes an excellent meat-free filling and might become your new favorite.

These tofu tacos are quick to prepare and rely on simple pantry ingredients—ideal for nights when you want a fast, wholesome meal without special shopping.

How to make tofu tacos

These tofu tacos are both straightforward and flavorful.

Begin with a block of extra-firm tofu. Cut it into cubes and mash with a fork until the pieces resemble coarse crumbs.

Heat a large skillet over medium and add one to two tablespoons of olive oil. When the oil is hot, add the crumbled tofu and cook, stirring occasionally, until much of the excess moisture evaporates.

Once the tofu moves freely in the pan and starts to crisp, prepare the sauce: dissolve tomato paste in water, then mix in chili powder, cumin, smoked paprika, onion powder, fine sea salt and nutritional yeast (optional but recommended). Pour the spice mixture over the tofu and reduce the heat to low.

Let the tofu simmer in the sauce for about 10 minutes, allowing it to absorb the flavors and most of the liquid.

Warm your corn tortillas according to package directions or on a hot skillet. Serve the tofu filling with your favorite toppings—tacos are a wonderful way to assemble a variety of fresh flavors and textures.

Ingredients:

  • 14 oz extra-firm tofu
  • 2 Tablespoons olive oil
  • 1 Tablespoon tomato paste
  • 1 Tablespoon chili powder
  • 1 cup water
  • 1 teaspoon fine sea salt
  • 1⁄2 teaspoon cumin
  • 1⁄2 teaspoon sweet smoked paprika
  • 1 Tablespoon nutritional yeastoptional but encouraged
  • 1 teaspoon onion powder
  • 10 corn tortillas

Instructions

  • Cut the tofu into cubes and place in a bowl. Mash with a fork until it resembles crumbles.
  • Heat a large skillet over medium and add one to two tablespoons of oil. When hot, add the tofu and cook, stirring occasionally, until excess moisture evaporates.
  • At this stage the tofu should move freely in the pan and be less sticky.
  • In a small bowl, dissolve the tomato paste into the water. Add chili powder, sea salt, cumin, smoked paprika, onion powder and nutritional yeast, then mix well.
  • Pour the spice mixture over the tofu, reduce heat to low, and simmer for about 10 minutes, until the tofu has absorbed most of the liquid.
  • Serve with your favorite taco toppings and warm tortillas.
