How to Make
Step 1: In a stand mixer fitted with the paddle attachment, cream together the butter, peanut butter, and both sugars on medium-high speed for about 4 minutes until fluffy. Add the egg and beat until combined, then add vanilla and scrape the bowl as needed.

Step 2: Add the baking soda, salt, and flour to the wet ingredients. Mix on low speed until a dough forms.

Step 3: Scoop rounded tablespoons of dough onto a parchment-lined baking sheet. Bake at 350°F for 11–13 minutes, or until the edges are golden and the centers are still slightly soft. Let the cookies cool on the baking sheet for 3 minutes before transferring to a wire rack.
