32 oz fresh spinach
1/2 medium Vidalia onion, chopped
2 cloves garlic, finely chopped
1 stick butter
3 tbsp flour
1 tbsp salt
1/2 pint heavy cream
5 oz cream cheese
3 oz Parmesan cheese, shredded
Crushed red pepper to taste
2 tbsp olive oil

Directions

  1. Rinse the spinach thoroughly in cold water and pat dry; removing excess water prevents a runny final dish.
  2. In a saucepan, melt the butter over low heat.
  3. Finely chop the onion and garlic.
  4. Add the onion and garlic to the melted butter and sauté for about 5 minutes, until the onions are translucent.
  5. Stir in the salt and flour and whisk over low heat for about 5 minutes to slightly thicken the butter.
  6. Slowly whisk in the heavy cream and bring the mixture to a gentle low boil.
  7. Add the cream cheese and stir frequently until it fully melts into the sauce.
  8. Stir in crushed red pepper to taste.
  9. Add the shredded Parmesan and stir until melted and smooth.
  10. Heat the olive oil in a large skillet and cook the spinach until wilted, about 2–3 minutes per batch if needed.
  11. Combine the cream sauce with the cooked spinach and stir until evenly coated.
  12. Transfer to a serving dish and garnish with extra Parmesan and a pinch of red pepper flakes if desired.
