Dairy-free Carrot Ginger Soup

This creamy, dairy-free carrot ginger soup delivers comforting flavor without milk or cream. It becomes silky from pureed cooked vegetables and a touch of coconut milk, making it a satisfying vegan option that comes together quickly with common pantry ingredients.

Creamy Vegan Carrot Soup Recipe

Cook time: 15–20 minutes
Serves: 4
Ingredients
2 tablespoons extra virgin olive oil
1½ lb carrots, diced
4 cloves garlic, minced
1 medium onion, chopped
Salt and freshly ground black pepper, to taste
3 cups vegetable broth
2 tablespoons fresh ginger, minced
2 teaspoons dried thyme (or 1 tablespoon fresh)
1/3 cup coconut milk
Garnish
Fresh thyme sprigs

Chef knife
High-sided skillet or large saucepan
Immersion blender or countertop blender
Instructions
1) Heat the olive oil in a high-sided skillet or saucepan over medium heat. Add the diced carrots, chopped onion and minced garlic. Sauté for about 5 minutes, stirring frequently, until the onions are translucent and the carrots begin to soften.
2) Add the vegetable broth, minced ginger, thyme, and salt and pepper. Bring to a simmer, cover, and cook for 10–15 minutes until the carrots are tender when pierced with a fork.
3) Remove the pot from the heat. Use an immersion blender to puree the soup until smooth, or transfer in batches to a blender and puree, then return to the pot. Taste and adjust salt and pepper as needed.
4) Stir in the coconut milk and warm the soup over low heat for a few minutes until heated through. Do not boil. Serve immediately, garnished with fresh thyme.
