Dill-Infused Green Beans and Okra Recipe for Fresh Summer Sides

This summer, whenever Jamie picked green beans he inevitably picked okra too—the rows sit side-by-side—and of course we gathered tomatoes. One evening my son and I decided to cook them together and finish the dish with fresh dill. The result was astonishing. Green beans and okra sautéed with garlic, red pepper flakes, tomatoes, and dill formed an unexpectedly delicious combination. This is now my absolute favorite way to enjoy okra, and it might even convert okra skeptics. It’s quickly become my new favorite way to eat green beans, too.

Green Beans and Okra with Dill

Equipment

Ingredients

  • 1 Tablespoon olive oil
  • 3 garlic cloves, sliced thin
  • 1/2 teaspoon Himalayan sea salt
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon freshly ground black pepper
  • 1-1/2 cups chopped Roma tomatoes
  • 1 pound green beans, fresh or frozen; trim each end, then cut into halves or thirds
  • 8 to 10 medium-small okra; trim stem end, then slice longwise into thin matchsticks
  • 2 teaspoons chopped fresh dill, optional

Instructions

  • Heat the oil in a large skillet over medium-high heat with a little of the garlic so it infuses the oil.
  • When the garlic begins to gently sizzle, add the remaining garlic, salt, crushed red pepper, and black pepper. Cook, stirring often, for a few minutes until the garlic softens and is fragrant.
  • Stir in the chopped tomatoes, green beans, and sliced okra; bring the mixture to a gentle simmer.
  • Cover and simmer, stirring occasionally, until the tomatoes and okra break down and the green beans reach a crisp-tender texture.
  • Remove from heat, garnish with chopped fresh dill if using, and serve warm.

Notes

If fresh dill isn’t available, substitute 1/2 to 3/4 teaspoon dried dill added during the step when you cook the garlic and spices.
