Note: This recipe was developed using the Char-Broil Big Easy Oil-Less Fryer. If you are cooking with the Char-Broil Smoker-Roaster Grill, cook with the lid open and set to High; you may need to adjust the cooking time.

These garlic Parmesan drumsticks cooked on a Char-Broil Big Easy show how a handful of simple ingredients — butter, garlic, and Parmesan — can turn ordinary chicken into something outstanding. If you love garlic, don’t be shy: add as much as you like.

Drumsticks — or Any Cut

I used drumsticks because they were on hand, but this method works with thighs, bone-in breasts, or whole chickens. If you use larger pieces, take care to season all surfaces — top, sides, and undersides — so every bite is flavorful.

Beware of Heat

The final step is brushing the cooked chicken with a buttery mixture of melted butter, garlic, Parmesan, and parsley. Use a long brush to avoid burning your hands. I remove the basket from the Big Easy and set it on a large baking sheet to catch any drips. It keeps things tidy and prevents grease from getting on the patio — and from attracting unwelcome critters.

Ingredients

  • 4 chicken drumsticks
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons granulated garlic
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon fresh garlic minced
  • 1 tablespoon Parmesan freshly grated
  • 1 tablespoon fresh parsley minced

Instructions

  • Preheat your Big Easy according to the manufacturer’s instructions.
  • Lightly spray the drumsticks with non-stick spray.
  • Mix the kosher salt, black pepper and granulated garlic, then rub the mixture over all sides of each chicken piece. Adjust the garlic-to-salt ratio to taste.
  • Place the seasoned chicken in the Big Easy basket, arranging pieces so air can circulate around them.
  • Cook until the internal temperature reaches 165°F (74°C). With drumsticks this typically takes about 40 minutes, but time will vary with cut size.
  • While the chicken cooks, combine the melted butter, minced fresh garlic, grated Parmesan and minced parsley.
  • Carefully lift the basket out of the Big Easy, set it on a baking sheet, and using a long brush, brush the chicken with the butter-Parmesan mixture to avoid burning yourself.
  • Return the basket to the Big Easy and cook for another 5 minutes or until the chicken is golden brown and the topping is set.
  • Remove the chicken and let it rest for 5 minutes before serving to allow juices to redistribute.

Notes

This method works very well with bone-in breasts or thighs; bone-in cuts tend to be juicier and more flavorful. If using larger pieces, increase the cook time until the internal temperature reaches 165°F (74°C).
