Ingredients
- 2 boxes dry chocolate cake mix (Devil’s Food works well)
- 4 eggs
- 2/3 cup vegetable oil
- CAKE BATTER FROSTING
- 1/2 cup butter, softened
- 3 cups powdered sugar
- 1/2 cup dry yellow cake mix
- 1 tsp vanilla extract
- 1/4 cup milk (adjust as needed for consistency)
- 1/4 cup sprinkles
Instructions
- Preheat the oven to 350°F (175°C). In a large bowl, beat the two boxes of chocolate cake mix with the eggs and oil until fully combined and smooth.
- Roll the dough into 1-inch balls and place them on greased or parchment-lined cookie sheets, spaced about 1–2 inches apart.
- Bake at 350°F for about 8 minutes. Avoid overbaking—the cookies should be slightly soft when removed. They firm up as they cool.
- While the cookies cool, make the cake batter frosting. In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, yellow cake mix, vanilla, and milk, mixing until smooth and spreadable. Fold in the sprinkles.
- Once the cookies are completely cooled, spread frosting on the bottom of one cookie and sandwich it with another. Repeat with remaining cookies. For extra fun, gently roll the frosted edges in sprinkles so they show when the cookies are stacked.
