- 2 large avocados
- 1 green onion chopped
- 1 tomato, diced
- For the dressing:
- 4 Tablespoons olive oil
- 1 Tablespoon lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon vinegar
- 1/2 teaspoon black pepper

Cut each avocado lengthwise and remove the pits. Use a large spoon to scoop each half out in one piece if you prefer to chop the avocado separately, or leave the flesh in the shell for presentation.
