Ingredients

  • 4 Tbsp coconut oil
  • 1/3 cup all-natural peanut butter
  • 2 Tbsp honey (or agave for vegan)
  • 1/2 tsp vanilla
  • 1 cup puffed rice cereal
  • 1 cup rolled oats
  • 1/3 cup dried apples, crushed slightly
  • 2 Tbsp chopped peanuts
  • 2 Tbsp ground flaxseed
  • 1/4 tsp apple pie spice
  • 1/4 cup white chocolate chips, melted (optional)

Instructions

  1. In a medium saucepan over low heat, melt the coconut oil. Add the peanut butter, honey and vanilla, and whisk until the mixture is smooth and combined.
  2. Remove the pan from the heat and stir in the puffed rice cereal, rolled oats, dried apples, chopped peanuts, ground flaxseed and apple pie spice. Mix until everything is evenly coated.
  3. With slightly wet hands, shape the mixture into balls about 1/4 cup each and place them on waxed paper. You should have roughly 18 cookies. Let them sit for 15–20 minutes to firm up.
  4. If desired, drizzle the cooled cookies with melted white chocolate. Serve and enjoy.
