Here’s a tasty Paleo-friendly protein waffle recipe I made recently as a post-workout meal. This recipe functions as a complete meal because it includes all three macronutrients—protein, carbohydrates, and healthy fats—making it ideal after intense strength training. Nutrition accounts for the majority of results when you’re working toward a fitness goal, so tracking macros and prioritizing protein is essential for muscle growth and definition.

These waffles are made with plenty of eggs and protein powder, delivering a substantial protein boost: about 25 grams of protein per two waffles, roughly equivalent to half a cup of cooked diced chicken. They’re a satisfying option when you crave something sweet without reaching for animal protein.

Ingredients

For the Protein Waffles

  • 1/2 cup tapioca flour
  • 1 cup hemp protein powder (unflavored)
  • 2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp sea salt
  • 2 medium apples, peeled, cored, and sliced
  • 10 eggs
  • 2 tsp vanilla extract
  • 3 tbsp melted coconut oil

For the Strawberry Topping

  • 1 container strawberry-flavored cultured coconut milk “Greek” style yogurt
  • 5 strawberries, sliced
  • 1 tbsp crushed pistachios (or other preferred nuts)

Instructions

  1. In a bowl, combine the tapioca flour, hemp protein powder, baking soda, cinnamon, and sea salt. Set aside.
  2. In a food processor, blend the apple slices, eggs, honey (if using), vanilla extract, and melted coconut oil until smooth. Pour the wet mixture over the dry ingredients and stir until well combined and lump-free.
  3. Preheat your waffle iron and cook according to the manufacturer’s directions. The batter makes about 10 waffles—divide the batter as needed to match your waffle iron size.
  4. Serve immediately with the strawberry yogurt, sliced strawberries, and crushed pistachios, or refrigerate cooked waffles for up to 4 days for quick post-workout meals.

Notes
