A couple things to note:
- You’ll need a sturdy kitchen mixer. Mixing the dough with xanthan gum for about 3 minutes helps create elasticity and improves the roll texture. A stand mixer or powerful hand mixer works best.
- The dough is very sticky. To shape rolls, keep a small bowl of lukewarm water nearby and wet your hands before forming each roll. Re-wet your hands as needed so the dough doesn’t stick.
- Handle the dough gently. Rather than squeezing, quickly smooth each ball to preserve the airiness—think light, confident motions.

Fluffy Gluten-Free Rolls
The absolute best gluten-free dinner roll I’ve made—egg and dairy free, and vegan friendly.
Ingredients
- 1 3/4 cups warm water
- 1 tablespoon organic cane sugar
- 2 1/2 teaspoons active yeast
- 2 1/2 cups gluten free flour
- 1 teaspoon salt
- 1 teaspoon xanthan gum
- 1/4 cup oil (grapeseed, avocado, or olive oil)
- Optional: dried parsley
- Optional: coarse salt
Instructions
- Fill a glass measuring cup with warm water and stir in the sugar. Add the yeast, stir briefly, and let sit 5 minutes until foamy.
- In the bowl of a kitchen mixer, combine the gluten-free flour, salt, and xanthan gum.
- Add the yeast mixture and oil to the mixer bowl. Mix on low until combined, scrape the bowl, then mix on medium-high for 3 minutes to develop elasticity.
- Scrape the bowl, cover with a cloth or plastic wrap, and place in a warm spot to rise undisturbed for 35 minutes.
- Preheat the oven to 400°F (200°C) and line two baking sheets with silicone mats or parchment paper.
- When the dough has risen, fill a small bowl with lukewarm water. Grease a 1/4–1/2 cup measuring cup, scoop dough into your wet hands, and gently shape into balls. Smooth the tops and place on the prepared sheets. Re-wet hands as needed.
- Optionally, sprinkle dried parsley or coarse salt on each roll.
- Bake for 26–28 minutes, until the internal temperature reaches about 200°F (93°C).
- For a crisper, browned exterior, broil on high for 1–2 minutes, watching closely.
- Allow the rolls to cool slightly before serving.
