Now that spring has arrived, I’m ready for green grass and leaves on the trees. Living in Minnesota means we wait a little longer for those signs of spring, so I like to bring the season indoors with food and plants. This easy spring appetizer combines both: fresh herbs, crisp vegetables and RITZ crackers arranged like little flower gardens—perfect for celebrations or a bright everyday snack.

I keep an herb garden year‑round because fresh herbs add flavor and beauty to the kitchen. They’re more economical than buying small amounts for individual recipes, and a few plants on the windowsill brighten the space. Right now I have mint and basil, and I wanted to add chives and parsley. While waiting for new plants to grow, I bought fresh chives and Italian parsley to use in this recipe.

I shopped for simple ingredients: RITZ crackers, cream cheese and colorful vegetables. RITZ crackers make a crunchy, buttery base for the toppings. If you have small cookie cutters – I used mini flower-shaped cutters – they’re perfect for cutting peppers into floral shapes. If you don’t have cutters, you can still slice and arrange veggies to create a pretty presentation.

To prepare the pepper flowers, slice both ends off your peppers so you have a flat surface. Press the cutter down firmly and evenly to cut through the pepper skin. If you want a hollow center for each flower, a small round piping tip or similar round tool works well to punch out the middle. You can also reserve the trimmings to finely dice for the cream cheese mixture.


For the filling, finely dice any leftover pepper pieces and mix them with shredded carrot, chopped parsley and minced chives into softened cream cheese. The fresh herbs lift the flavor and add bright green color, while the peppers and carrots contribute sweetness and crunch. If you’re short on time, simply spreading the veggie cream cheese on a RITZ cracker is a tasty and attractive option.

Once the cream cheese is ready, top each cracker with a generous dollop. Arrange the pepper flower cutouts, use chives as stems, and tuck parsley sprigs around the base to create miniature edible gardens. The result is colorful, fresh and irresistible—great for Mother’s Day, baby showers, bridal showers or any spring gathering.

Kids and adults both love these. My son was delighted by the colorful flowers, and it’s a fun way to get more vegetables into snacks and party spreads. Serve the crackers fresh so the veggies stay crisp and the herbs look vibrant.



Easy Spring Appetizer with Veggie Flowers
Ingredients
- 40 RITZ Crackers
- 1 package 8 oz cream cheese, softened
- 3 medium to large peppers yellow, red and orange
- 1/3 cup finely shredded carrot
- 1 tablespoon finely chopped fresh parsley
- 1 tablespoon finely chopped fresh chives
- fresh parsley for garnish
- fresh chives for garnish
Instructions
- Using small metal cutters, create flower shapes from yellow, red and orange peppers.
- Set the pepper flowers aside.
- In a small bowl, beat the softened cream cheese until smooth.
- Finely dice excess fresh peppers to equal about 1/3 cup.
- Add diced peppers, shredded carrot, parsley and chives to the cream cheese and beat until well combined.
- Top each cracker with a spoonful of the veggie cream cheese.
- Arrange pepper cutouts, chives and parsley to make flowers on top of the crackers.
- Serve immediately so the vegetables stay crisp.
