Fresh strawberries are available most of the year, and when they go on sale it’s the perfect time to make several batches of freezer jam. Freezer jam is fast and keeps more of the fresh strawberry flavor than a long-cooked jam, which is one of the reasons we prefer it.
Why use pectin to make jam?
Pectin helps the fruit’s natural acids and the added sugar form a gel. Adding pectin shortens the “cooking” step and preserves a brighter, fresher strawberry flavor in the finished jam.

What you need to make freezer jam
In addition to the recipe ingredients, a few tools make the process easier:
– a wide-mouth funnel
– wide-mouth mason jars
– plastic lids (easier to use and seal for freezing)

How long is freezer jam good for in the fridge?
After thawing in the refrigerator, a jar of freezer jam will stay good for up to one month.

Strawberry Freezer Jam
Homemade strawberry freezer jam is quick, fresh-tasting, and far superior to most store-bought jams.
Ingredients

Pureed strawberries (about 1 qt of strawberries)
washed and hulled -

Granulated sugar -

Packet Sure-Jell fruit pectin
Instructions

Prepare jars or containers by rinsing with hot water and drying thoroughly.

In a large bowl, combine the pureed strawberries and sugar. Stir for about 5 minutes until the sugar dissolves, then let the mixture rest for 10 minutes.

In a small saucepan over high heat, whisk together the water and pectin. Bring to a boil and cook for one minute, stirring constantly.

Pour the hot pectin mixture over the strawberry mixture and stir for about 5 minutes until fully combined.

While still warm, fill jars, leaving about 1/2 inch headspace to allow for expansion in the freezer.

Screw on lids and let jars sit at room temperature for 24 hours before transferring to the freezer.

To use, thaw a jar in the refrigerator for 24 hours before serving.
Recipe Notes
Frozen jam keeps well for 3–6 months in the freezer and up to 1 month in the refrigerator once thawed.

Can you use glass jars for freezer jam?
Yes. Use freezer-safe tempered glass—most mason jars are suitable. Freezer jam doesn’t require a traditional vacuum seal, so stackable plastic containers with tight lids work too, but glass mason jars are attractive and practical.
