This Fish Taco Seasoning is

  • Homemade: Control the ingredients and skip unwanted preservatives. You can also adjust the spice level to your preference.
  • Flavorful: A great blend for white fish or shrimp, adding bright, savory notes to tacos.
  • Quick and easy: Made from common pantry spices and ready in under a minute.

What’s in Fish Taco Seasoning (Ingredients)

Ingredients needed to make fish taco seasoning.
  • Chili powder
  • Ground cumin
  • Cayenne powder
  • Salt
  • Garlic powder
  • Onion powder

How to Use It as a Dry Rub

This mix is intended as a dry rub: rub it directly onto the fish—no marinade or oil required. If you prefer a marinade, this rub can be adapted by mixing it with a little oil and citrus (we used that approach in our Healthy Cod Fish Taco recipe). To apply the dry rub:

  • Pat the fish dry. Dry fish helps the seasoning stick and promotes even cooking.
  • Season evenly. Sprinkle an even layer over one side and gently press the rub to adhere, then flip and repeat on the other side.

Types of Fish & Cooking Methods

This seasoning pairs well with most white fish commonly used in tacos. Favorites include:

  • Mahi mahi: Dense, slightly sweet, and holds up well on the grill.
  • Tilapia: Mild, slightly sweet, and firm.
  • Cod: Delicate, flaky texture with a mild flavor.

Cook the seasoned fish by baking, pan-searing, or grilling:

  • Bake: Place seasoned fish on a parchment-lined sheet and bake at 400°F for about 10 minutes, until cooked through.
  • Pan-sear: Heat a skillet over medium with a small amount of oil and cook 3–4 minutes per side, depending on thickness.
  • Grill: Preheat grill to 375–425°F and cook over indirect heat 3–4 minutes per side, adjusting for thickness.

Large Batch & Storage Instructions

This recipe yields enough seasoning for about 1 pound of fish. A good guideline is 1/2 to 1 teaspoon per side of a fillet.

  • Large batch: Multiply the recipe by five (or more) and store in a jar. When using a large batch, measure about 2 tablespoons of seasoning per 1 pound of fish.
  • Storage: Keep the spice mix in a sealed jar in a cool, dark pantry. It will stay fresh for up to one year.
